Tom Ka Guy

Hey all! Looking for a tasty super easy recipe to make?! You’ll love this one.


1-2 qts Broth (chicken or veggie)
1/2 Onion or 3-4 shallots (slivered or minced - your preference)
1 cup Carrots (slivered or halved into small bite sized PCs)
1 cup Peas (cut into 3rds)
1 Peppers (sliver)
1-2 cups Purple cabbage (shredded)
2 stalks Lemon grass ((cut into 1/2 inch PCs)
Kefir lime leaves 6-8
3-4 Limes - juiced
1 good sized knuckle Ginger (minced)
1/2-1 tsp Turmeric 
1/2-1 tsp Coriander 
1/2-1 tsp Cumin
1-2 Tbsp Red or green chili paste
1 bunch Cilantro chopped
3-4 chicken breasts, OR 4-6 chicken thighs (bite sized chunks), OR de-shelled shrimp
If you want rice: 2-3 cups of jasmine rice (start just before you start soup) NOTE: 2 cups of water to 1 cup of rice.


MAKE IT HAPPEN:
Sautés onion or shallots in a Tbsp of sesame oil or coconut oil
Add broth, ginger, and lemon grass, and turmeric, cumin, coriander, and chili paste, bring to a simmer. 
Add carrots, bring to simmer
Add meat (chicken only) bring to simmer
Add cabbage and coconut cream/milk, bring to simmer
Add peppers (and Shrimp) turn off and stir for 1-2 min. (If shrimp are frozen, leave burner on and just as it comes back to simmer, turn off and serve. 
I prefer rice packed to the side of the bowl, soup on the other side. 
Top with cilantro and half a limes juice
To mix it up you can add heavily toasted (not burned, but close, slivered almonds.

Rice: 2 large Tbsp of coconut oil in the bottom of a large sauce pan, high heat, constantly stirring add rice till it begins to smell toasted and turn from opaque to solid white. DO NOT LEAVE UNATTENDED, or stop stirring. Add HOT water. It should instantly be at a rolling boil. Turn to low, cover, set timer for 20. DO NOT UNCOVER AT ALL! When timer goes off remove from heat, rice is ready to eat of you prefer a firmer texture. If you want less cleanup, set timer for 10 min (still do not uncover), pan will be easy to clean.
